Tomatoes are a versatile food. Refreshing in salads and chilled soups, warm and comforting in sauces or stews during the winter, they make wonderful preserves and add a delicious touch to a sandwich. Often tomatoes bought at the grocery store are on the hard side and could do with more time to ripen. It can be achieved at home. Get a paper bag and pierce a few holes, place tomatoes in the bag with an apple and keep until fully ripe.
Tomatoes taste best when stored at room temperature, in a place out of direct sunlight. Cold temperatures destroy their flavor and turn their flesh into pulp. However, the cold helps to preserve nutrients and if you need to keep the tomatoes for a few days, the refrigerator may be your only option.
Plum tomatoes have a wonderful flavor. They are great for sauces either fresh or canned. Canned plum tomatoes may beat fresh, out of season tomatoes.
