Apple, Walnut Chocolate Chip Cookies

Description These are over sized, chewy and thick cookies. They are best when served warm, but will not become hard if allowed to sit.

  • 2 cups plus 2 tablespoons all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 12 tablespoons (1 12 sticks) unsalted butter, melted and allowed to cool
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg plus 1 egg yolk
  • 2 tsp vanilla extract
  • 1-1 1/2 cup semi-sweet chocolate chips
  • 1 cup chopped baking apples
  • 1 cup finely chopped walnuts
Methods/steps
  1. Preheat oven to 325°F.
  2. Whisk flour, baking soda and salt together, set aside.
  3. Beat the butter and sugar -both types- together until smooth. beat in the egg and the egg yolk. Then add the vanilla, mix until just combined. Add dry ingredients until just combined. Mix in the chocolate chips, apples and walnuts.
  4. Roll dough in hand, into a 1/4 inch ball. Pull the ball into 2 -halve it. Rotate halve 90 degrees and place together, with the jagged surface facing out. Place onto cookie sheet, keeping the dough balls 2 1/2 inches from one another. Bake 15 minutes, turning the cookie sheet from front to back half way through.
  5. Allow cookie to cool on sheet for at least 2 minutes before moving them to a cooling rack.
