Banana and Mango Ketchup

Description

Sweet and tangy, it will enhance any roast pork and many other pork recipes.

2 cups
  • 2 mangos, peeled and coarsely chopped
  • 1 very ripe banana, peeled and coarsely chopped
  • 1/4 cup finely diced sweet onions
  • 1 Tbs tomato paste
  • 1 clove garlic, chopped
  • 1 tsp kosher salt
  • 2 Tbs light brown sugar, packed
  • 1 Tbs molasses
  • 1/4 cup balsamic vinegar
  • 1 Tbs Worcestershire sauce
  • 1/2 tsp ground chipotle pepper
  • 1/4 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp ground allspice
  • 1/4 tsp freshly-grated nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup water
Methods/steps
  1. Using a food processor, puree the first 10 ingredients.
  2. Place the puree into a large saucepan, add the remaining ingredients. Bring to just a boil, reduce heat and simmer for at least 15 minutes. Be sure to stir often.
  3. Remove from heat, cool before serving or placing in fridge.

Goes with: fritters, shellfish, pork, chicken, sausage, ham, or appetizer meatballs.
