Chicken & Sweet Potato Stew Recipe

  • 6   bone-in chicken thighs 
  • 2 lbs   sweet potatoes 
  • 1/2 lb   white button mushrooms 
  • 6   large shallots 
  • 4   cloves garlic 
  • 1 cup   dry white wine 
  • 2 tsp   chopped fresh rosemary 
  • 1 tsp   salt 
  • 1/2 tsp   freshly ground pepper 
  • 1 1/2 Tbs   white-wine vinegar
Methods/steps
  1. Combine chicken, sweet potatoes, mushrooms, shallots, garlic, wine, rosemary, salt and pepper in a 6-quart slow cooker
  2. Top with the lid and cook for 5 hours.
  3. Remove bones from chicken, and stir in vinegar before serving.
