Curried Mushrooms Recipe

Description Curry spice mix has an extra healthy component due to turmeric.

  • olive oil cooking spray 
  • 1 l   button mushrooms, trimmed 
  • 3 cm   piece ginger, peeled, grated 
  • 2   garlic cloves, crushed 
  • 1/2 cup   korma curry paste 
  • 2/3 cup   thick, plain yogurt 
  • 80 g   baby spinach 
  • 1 1/3 cups   steamed jasmine rice 
  • 1/2 cup   coriander leaves, to serve
Methods/steps
  1. Using a wok, heat over a high heat until hot. Spray with oil. Stir-fry for 1 minute, mushrooms, ginger and garlic. Mushrooms will be a light gold in color. Add in the curry paste and stir-fry until aromatic, about 1 minute.
  2. Remove the wok from heat. Stir in the yogurt and the spinach until just combined. Return to heat and stir-fry for another minute. Do not allow to boil, only heat through.
  3. Spoon cooked rice into serving bowls. Top with the mushrooms and coriander.
