Garlic Mushrooms on Toast Recipe

  • 1 Tbs   butter 
  • 2 tsp   vegetable oil 
  • 2 oz   open cup mushrooms 
  • 1   garlic clove, finely chopped 
  • 4 fl oz   oz white wine 
  • 2 Tbs   double cream 
  • 1 Tbs   parsley, chopped 
  • 2   slices bread, thick sliced 
  •   olive oil, for drizzling
Methods/steps
  1. Place the butter and oil together into a small frying pan. When butter just foams, add the mushrooms and the garlic. Sauté for 2-3 minutes.
  2. Pour in the white wine and reduce for 1 -2 full minutes.
    Combine with the cream. Sprinkle with parsley to finish.
    Heat a griddle or heavy skillet. Toast the slices of bread, drizzling with the olive oil, until you achieve a nice golden color.
  3. Top the toast with the garlic and mushroom mixture.
