No Sauce Menestra

Description No sauce, no wine, only vegetables. This recipe is a variation of menestra Monterrey; we use the same technique.

  • 4 big leaves green chard, only white stalks, washed and trimmed to 1 1/2 in.
  • 2 cups shelled peas
  • 1 cup cut green beans - top and tail, cut about 1 1/2 in. long
  • 1/2 cup leeks - leaves trimmed, cut in half lengthwise, washed and trimmed to 1 1/2 in.
  • 2 medium potatoes, peeled and diced, or 8 small rounded ones, peeled
  • 1/4 cup olive oil
  • 2 cloves of garlic, thinly sliced
  • Salt and pepper
Methods/steps
  1. Boil the vegetables over medium-low heat until tender. Strain, season, and transfer to a warm serving dish. Keep warm.
  2. Heat up the oil in a frying pan and cook the garlic until golden, 1 to 2 minutes. Coat the vegetables with garlic and oil. Serve straight away.

Garlic cooks very quick and blackened garlic tastes bitter. Be careful and do not overcook.
