Moussaka

How do you prepare moussaka?

From: Gemma, Madrid

Easy! Layer grilled eggplant slices and meat sauce –Bolognese or sloppy Joe type- finishing with eggplant. Cover with white sauce –you can make it more interesting by using a mushroom and cheese sauce- and sprinkle grated cheese on top. Cook under the grill until the sauce bubbles and the cheese browns; it will take from 20 to 40 minutes, depending on quantity of moussaka prepared and size of baking dish.

Full of Flavor

The sauce has a salty flavor, not dissimilar to that of beef extract. - Widely used in Oriental and south-east Asian cuisines: as sauces, paste, bean curd or tofu, in all sorts of savory dishes, marinades, also to season dips and accompaniments. Black bean, hoisin, and miso are common soy based sauces for rice, noodles, meat, fish and poultry dishes.
